I was wondering the same thing! I caught the last 30 min. of that episode so I didn't hear how she went blind. And I couldn't remember from watching it previously. Thanks for asking my question! :o)
At the age of fourteen, Mary suffered an illness (variously described as scarlet fever, "a severe case of the measles", and as a stroke in her sister's unpublished memoir, Pioneer Girl) which resulted in lifelong blindness. [1] Between 1881 and 1889, she attended the Iowa College for the Blind at Vinton, Iowa. There was one year in that interim where she did not attend the school, and the historical record is silent as to why, but she did finish the seven year course of study in 1889 and graduated. Then she returned home to De Smet, South Dakota and lived with her parents until their deaths. Later, she lived with her sister Grace and then Carrie. Contrary to the character on the "Little House" television series, she never married, nor did she become a teacher of the blind. She died on October 20, 1928 at the age of 63, as a result of pneumonia and complications from a stroke. She was buried at De Smet Cemetery.

Mary went blind later in life in the books than she did in the show. The book description reads, "This book is about Laura becoming a schoolteacher so she can send her blind sister Mary to a school for the blind."
In real life, Mary attended school at the blind school for a number of years, then returned home and lived with her parents until their deaths in De Smet, SD. After that, Mary moved in with her sister Carrie, who lived in the Black Hills of SD, until Mary died in her 60's. She had some sort of medical problem which made her gradually go blind. I can't remember the exact disease, but I do remember it was gradual until one morning she woke up and couldn't see anymore. "Pa Pa, I can't see!" In the books it was scarlet fever that did it.
As for what happened after she married Alex... they ran a school for the blind together until he got his sight back. I think he became a doctor or lawyer after that. I don't think Mary officially "left" the show, they just focused less on her because the school was so far away from the Ingalls family.
She married Adam and he became a lawyer and they moved to a big city. But that's not what happened to the real Mary. The real Mary lived with Laura and Almanzo and never married or had children.

I think she just woke one morning and couldn't see properly then it was gradual until she couldn't see at all.
I think her sight started to return though years later. Mary had beautiful eyes if i remember correctly.
